Snow Day!

Hi friends!  Thank you for all of your sweet comments on the reunion.  It really did feel kind of like a movie 😀

So, after a disastrous THREE hour commute to work yesterday and an additional foot of snow predicted today, I declared a self-imposed snow day today.  My car (Rav4) is fantastic in the snow aside from the problematic feature of the windshield wipers freezing up, which is an issue when I thereby can’t see.  Yeah.  Didn’t want to do that again. 

After sleeping in until a leisurely 10:00 A.M., I sat down at the kitchen table with my coffee and oatmeal and got to schemin’ about lunch.  This is the easiest “recipe” (really, you’re just throwing things together) and it is so so delicious.  In fact, I think it may be my new default lunch!

First, gather your ingredients.  You can get creative- this is my third time having this wrap this week (and it’s only Wednesday!) and each wrap has been different). 

Assemble the veggies.

 Spread on the “spreadables” (goat cheese, mango salsa, garlic hummus and artichoke tapenade) and pile on the veggies.

Fold the wrap (yes, I had to google “how to fold a wrap”) and enjoy!

Veggie Packed Lunch (or dinner!) Wrap

Ingredients:

  • handful of button mushrooms, chopped
  • handful of cherry tomatoes, chopped
  • handful of baby spinach
  • goat cheese (enough for one wrap)
  • hummus
  • salsa
  • artichokes, chopped
  • Delicious artichoke tapenade from Trader Joe’s
  • wrap of your choice (I like the sun-dried tomato wraps)

Directions

  1. Lay wrap flat and spread on hummus, goat cheese and salsa
  2. Add veggies
  3. To wrap, fold the top and bottom of wrap first.  Then, cover the middle with the sides and you should be good to go!

Easy, delicious and filling!

What else does a snow day entail?

A form of cross-training that I think a lot of us are familiar with these days:

Shoveling!  Poor Mr. B- he so desperately wants to be outside with me but as soon as his little body hits the snow, he starts shaking uncontrollably!  I haven’t shoveled in a while- man, it is a really good workout!

After that, I still wanted to get a run in.  Unfortunately, my gym was closed because of the weather.  My brother’s wasn’t though and they just gave me a free seven-day pass!  Awesome!  It probably has something to do with the fact that my brother pretty much lives there 😉

I got a nice quick three miles in doing what is becoming my favorite interval workout:

  • Quarter mile @ 5.4
  • Quarter mile @ 5.7
  • Quarter mile @ 6.0
  • Quarter mile @ 7.1
  • Repeat!

I also got to try out some of my new lululemon duds.  Bri, sweet husband that he is, got me these pants and this top for Christmas.

Honestly, I really like this ensemble. It took me almost a mile to get to that point though.  The pants kept riding down, which was really frustrating.  However, after a little sweat they fit perfectly!  I’m glad too because I want to get a lot of wear out of these pants!  Has anyone else had this happen with a lululemon crop?  I have a few other pairs of pants from them that fit perfectly so I was surprised by the riding down issue.

I have some pretty exciting blog stuff coming up- Julie is going to be doing some design/transitioning work for me and I am stoked!  I added a recipe tab (though I still have a lot to add!) and am looking forward to some fun changes!

So, was today a snow day for you?  I am ready for winter to be overrrrrr.  On a bright note, Punxsutawney Phil did NOT see his shadow, which means early spring!  Woo!  I don’t really buy it but I’ll take what I can get :p.

Your Eat Pray Love “Word” & Wardrobe Challenge Day 12

Hello friends!  Thank you so much for the birthday wishes.  I had a fantastic weekend with my girls on Long Island.  After an interesting train ride (ha), we shared some authentic wood-fired pizza with fried eggplant on it.  Yum!  Saturday was my actual birthday and I started the day/28th year out right with a seven mile run 😀  I can’t even believe that I just wrote that.  If you had told me a year or two ago that not only would I voluntarily run seven miles on my birthday but actually consider it one of the highlights of the day (among many highlights) I would have laughed and laughed.  I love the “new” me. 

I tried a new fuel source during the run- chocolate mint gu.  I received a free sample from my local running store and figured why not try it?  I flippin’ LOVE it.  It tasted like chocolate syrup and the texture didn’t bother me at all.  I recommend drinking a lot of water with it, because it was a little thick. 

One of my fave bloggers, Tina, had a birthday yesterday.  She wrote this great post saying that “you know you’re a healthy living blogger when..” and listed all of the health related items that she wanted for her birthday.  I received some AWESOME gifts for my birthday- 10 hot yoga classes from my stepmom, a hot yoga outfit from my bestie Kristin, an entire lululemon outfit (crop pants, sports bra and tank) from Bri AND a gift card to lululemon from my friends Nicole and Alicia.  Fitness related much?  Nicole and Alicia also let me know that there was a lululemon store less than FIVE minutes from Nicole’s house on Long Island AND the store was hosting a free yoga class Sunday morning.  Awesome birthday gift, eh?  Kristin and I skeddadled over there Sunday morning for a fantastic yoga class and I then spent my gift card on an awesome pair of running shorts.  By the way, I love the word awesome, if you couldn’t tell.  I wish there was a lululemon store in the area.  I would definitely try to work there.  And spend my entire paycheck there.  Anyway.

Today is day 15 of the wardrobe challenge.  Woohoo, HALFWAY DONE.  I am proud that I have stuck with it.  Saturday (Day 12) I didn’t get a full length picture:

On Sunday we had a suprise baby shower for Alicia (she is having a little girl in December!) complete with Crumbs cupcakes.  Overall, it was an amazing  weekend 🙂

Holy ginormous cupcakes!  I definitely dominated the peanut butter cup cupcake in the bottom right corner.  Amaze. 

Last week I wrote about Eat Pray Love and asked you what one word you thought defined you.  I loved the responses:

I loved the words you guys selected!   They are all positive and demonstrate a thirst and passion for life.  I’ve been trying to come up with a word for myself and although I don’t want to limit myself to one word, I think I have it.  Effervescent.  For whatever reason, that word happened to pop into my head.  I googled the definition:

1. To emit small bubbles of gas, as a carbonated or fermenting liquid. Uh, no.

2. To escape from a liquid as bubbles; bubble up. Nope again.

3. To show high spirits or animation. YES.  

I don’t think I am like this all the time, but it is something that I strive towards.  Not necessarily to be animated but to appreciate life and radiate positivity.  To be happy.  Although when I eat something that is particularly delicious I tend to get a little animated.  So, for now, I am choosing my word to be effervescent.  Like Molly said, I think we are constantly evolving.  So who knows what my future word will be 😉

Cutest water bottle EVER

So… I’m still drinking out of my Sigg water bottle that apparently has BPA infested lining (any Sigg water bottles purchased prior to September 2008 are susceptible I believe… see info here). If you have a Sigg water bottle and are unsure as to whether or not it is affected, the non-BPA lining is a sort of creamy yellow color, whereas the old BPA lining is copper. Mine is copper so unfortunately, the Sigg got to go. Although I didn’t want to purchase another Sigg (I was ready to go Kleen Kanteen… BPA free all along and NOT misrepresentative about it) I saw this adorable water bottle on the lululemon website. Behold:
I saw the water bottle in Fitness Magazine and fell in love. My dad told me to order it for Christmas so I’m getting the yellow I ❤ running one! I can't wait! My co-workers will probably make fun of me for it but I don't care. It's so fun and happy!
So do you subscribe to the theory that water bottles with bpa are bad? Or are you more my grandmother used bpa products and is just fine, thankyouverymuch?
